Recipe: Spinach & Mushroom Quinoa

I’ve been getting a few e-mail requests to post recipes here. For those of you who are trying to go vegetarian/vegan, it’s important that you learn to prepare your own food because veg options won’t be readily available for you all the time. Here’s an easy 3-step recipe that I made over the weekend.

* Drizzle some Olive Oil over the veggies before popping the tray in the oven!

Quinoa /’ki-nwa/ is an amino-acid rich (complete protein) seed that has a fluffy, creamy, and slightly crunchy texture and a nutty texture. It’s a great rice alternative because it’s super high in fiber, manganese, magnesium and iron. After making this recipe, you can eat it right away, or you can also grind the ingredients into a food processor, roll them into burger patties, and grill them!
